ironic

Last week my friend Tara wrote on her blog (here) about how she has always had trouble making bread and really wanted to be able to make really good homemade bread. She discovered her problem had been her yeast. I left her a comment that said something like keep at it, I had problems like that too, blah..blah..blah, etc.
While I was reading her blog and commenting I was in fact in the midst of making bread--rolls to be specific--for our enrichment activity. The first batch turned out fantastic!!! The second batch (on the right of the pics) didn't work out so great.
It turns out the yeast I used for the second batch expired in 2006. (I didn't even know I had any that old in my drawer). By the time I discovered there was a problem there was no time to go to the store, buy more yeast and make more rolls. So I decided if there were a lot of ladies at enrichment I would cut the rolls in half and call them "diet rolls".
Luckily, one pan was the perfect amount, the whole evening turned out great, (I'll post more about that later) and my kids didn't mind eating hockey pucks with their jam.

A good recipe deserves to be shared!

Quick Dinner Rolls
  • 3 Cups very warm water
  • 8 Tablespoons oil
  • 8 Tablespoons Sugar
  • 1 1/2 Tablespoons Salt
  • 1 egg
  • 3 Tablespoons Yeast
  • 8 - 10 Cups Sifted Flour (enough to make a soft dough)

Mix all ingredients, except flour, together. Cover and let yeast dissolve for about 20 minutes. Add flour and knead for 10 minutes in electric mixer or 20 min.by hand. Do not let dough rise at this point. With greased hands shape as desired and let rise in greased pan. Bake at 400 – 425 degrees about 12 to 15 minutes until brown. I get about 30 big rolls.

I feel so much better knowing that a pro such as yourself has mishaps as well. Thanks for the recipe, I'm so excited to try it. There's nothing better than rolls with homemade jam, right?

Your rolls look delicious. I copied the recipe. Looks like a good one. I enjoyed the re-naming of the rolls, "diet rolls". That works. I also checked out some of the blog-spots you listed. That was fun.
