I'm still doing it.
To the consternation of my family they are still being subjected to eating my muffin concoctions.
Really --- I think they kind of enjoy it.
My latest recipe is by far my favorite.
So, I thought I'd post it for two reasons
- It really is good enough to share.
- If I don't write it down I'll forget it and I want to make these again --- probably today!
Lemon Yogurt Muffins
- Ingredients:
1 3/4 cups all-purpose flour - 3/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 Tablespoon lemon zest
- 1 egg
- 1 cup lemon or plain yogurt
- 1/2 teaspoon lemon extract (if using plain yogurt)
- 6 tablespoons butter or margarine, melted
- lemon juice from one lemon
Method
- In a large bowl sift together the first five ingredients. Stir in lemon zest.
- In another bowl whisk together the egg, yogurt, butter and lemon juice.
- Stir wet ingredients into dry ingredients just until moistened. (The batter will be thick)
- Fill greased muffin cups, bake 375 degrees, mini muffins 10 - 11 minutes, regular muffins 16-17 minutes.
- Let cool in pan 5 minutes.
Glaze
- 1/3 cup lemon juice
- 1 Tablespoon melted butter
- 1 teaspoon lemon zest
- enough confectioners sugar to make a glaze (about 1/2 cup)
- Whisk all ingredients together until smooth.
- Remove muffins from pan and dip tops in glaze.
- Place on wire rack to cool completely.
- Enjoy!
