tasty!


I'm still doing it.
To the consternation of my family they are still being subjected to eating my muffin concoctions.
Really --- I think they kind of enjoy it.
My latest recipe is by far my favorite.


So, I thought I'd post it for two reasons
  1. It really is good enough to share.
  2. If I don't write it down I'll forget it and I want to make these again --- probably today!

Lemon Yogurt Muffins

  • Ingredients:

    1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 Tablespoon lemon zest
  • 1 egg
  • 1 cup lemon or plain yogurt
  • 1/2 teaspoon lemon extract (if using plain yogurt)
  • 6 tablespoons butter or margarine, melted
  • lemon juice from one lemon

Method

  1. In a large bowl sift together the first five ingredients. Stir in lemon zest.
  2. In another bowl whisk together the egg, yogurt, butter and lemon juice.
  3. Stir wet ingredients into dry ingredients just until moistened. (The batter will be thick)
  4. Fill greased muffin cups, bake 375 degrees, mini muffins 10 - 11 minutes, regular muffins 16-17 minutes.
  5. Let cool in pan 5 minutes.

Glaze

  • 1/3 cup lemon juice
  • 1 Tablespoon melted butter
  • 1 teaspoon lemon zest
  • enough confectioners sugar to make a glaze (about 1/2 cup)
Method
  1. Whisk all ingredients together until smooth.
  2. Remove muffins from pan and dip tops in glaze.
  3. Place on wire rack to cool completely.
  4. Enjoy!
