I recently purchased a mini muffin pan.
How have I lived so long without one?
I feel like a more rounded person now that I own one. LITERALLY!
Because, now I have it I want to use it.
I tried out a new recipe from http://www.allrecipes.com/
Banana Muffins
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1 teaspoon vanilla
- 1/3 cup butter, melted
Method:
- Preheat oven to 350 degrees F. Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
- Combine bananas, sugar, egg, vanilla and melted butter in a large bowl. Fold in flour mixture, and mix until just moistened. Will be lumpy. Scoop into muffin pans.
- Bake in preheated oven. Mini muffins for 10 - 15 minutes, and large muffins for 25 - 30 minutes. Muffins will spring back when lightly tapped.
Amazingly, I didn't tinker with this recipe. I just made it as is.
Loved it.
I hope you do to!
