Muffins

I recently purchased a mini muffin pan.

How have I lived so long without one?

I feel like a more rounded person now that I own one. LITERALLY!

Because, now I have it I want to use it.

I tried out a new recipe from http://www.allrecipes.com/
They were a big hit with the family. So, I thought I'd share it with you.

Banana Muffins
Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 large bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/3 cup butter, melted

Method:

  1. Preheat oven to 350 degrees F. Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
  2. Combine bananas, sugar, egg, vanilla and melted butter in a large bowl. Fold in flour mixture, and mix until just moistened. Will be lumpy. Scoop into muffin pans.
  3. Bake in preheated oven. Mini muffins for 10 - 15 minutes, and large muffins for 25 - 30 minutes. Muffins will spring back when lightly tapped.


Amazingly, I didn't tinker with this recipe. I just made it as is.

i can't believe i never offered feedback, my bad! they were delicioso and for some reason i think muffins always taste better in mini form. fyi bluberries my fave :)

I tried the banana muffin recipe today they were really good. I also used it to make an apple muffin and it was good too. Thanks for the recipe. Hope you had a Happy 4th of July.
